Winter Vegetable Casserole

Winter Vegetable Casserole with roasted seasonal vegetables, a cozy and healthy dish perfect for colder days.

Ingredients
  

  • 2 cups sweet potatoes cubed
  • 1 cup carrots sliced
  • 2 cups Brussels sprouts halved
  • 1 medium red onion chopped
  • 3 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme or rosemary
  • ½ cup Parmesan cheese optional

Instructions
 

  • Preheat oven to 425°F and prepare a baking dish.
  • Combine vegetables in a bowl.
  • Add olive oil, garlic, salt, pepper, and herbs.
  • Toss until evenly coated.
  • Spread in a single layer in baking dish.
  • Roast for 25–30 minutes, stirring halfway.
  • Check for tenderness and crisp edges.
  • Add Parmesan cheese if desired and bake 5 more minutes.
  • Remove from oven and serve warm.

Notes

Do not overcrowd pan for best roasting.
Use seasonal vegetables for best flavor.
Serve immediately for best texture.
