Valentine’s Day Swirl Cookies

Ingredients

cup
unsalted butter
softened
1
cup
granulated sugar
1
large egg
1
teaspoon
vanilla extract
2 ½

all-purpose flour

teaspoon
baking powder
½
teaspoon
salt
Red food coloring
Pink food coloring
Instructions
In a large bowl, cream butter and sugar until light and fluffy.
Add egg and vanilla extract and mix until combined.
In a separate bowl, whisk flour, baking powder, and salt.
Gradually add dry ingredients to wet ingredients and mix just until a soft dough forms.
Divide dough evenly into three portions.
Leave one portion plain. Tint one portion pink and one portion red.
Roll each dough portion into equal rectangles between parchment paper.
Stack dough layers evenly and press gently together.
Roll tightly from the long edge into a log.
Wrap and refrigerate for at least 1 hour.
Preheat oven to 350°F and line baking sheets with parchment paper.
Slice dough log into rounds and place on baking sheet.
Bake for 9–11 minutes until edges are set and centers are soft.
Cool briefly on baking sheet, then transfer to a wire rack.
Notes
Chill dough thoroughly for best swirl definition. Gel food coloring gives the brightest color.
