Traditional Lekach Honey Cake

Traditional Lekach Honey Cake with rich honey flavor and warm spices, a classic and comforting dessert.

Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup honey
  • ½ cup sugar
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 cup strong brewed coffee or tea
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat oven to 350°F and grease a baking pan.
  • Mix flour, baking powder, baking soda, cinnamon, and salt in a bowl.
  • In another bowl, combine honey, sugar, oil, and eggs.
  • Add coffee or tea and vanilla extract and mix well.
  • Gradually add dry ingredients to wet mixture.
  • Stir until just combined.
  • Pour batter into prepared pan.
  • Bake for 40–45 minutes until done.
  • Cool before slicing and serving.

Notes

Do not overmix batter.
Use good-quality honey for best flavor.
Brush extra honey on top for added moisture.
