Taco Potatoes

Taco potatoes with seasoned beef, cheese, and fresh toppings. Easy loaded comfort dinner recipe.

Ingredients
  

  • 4 large russet potatoes
  • 1 lb ground beef
  • 1 packet taco seasoning or 2 tablespoons
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1 cup sour cream
  • 1 cup salsa
  • 2 tablespoons butter
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions
 

  • Preheat oven to 400°F.
  • Wash and pierce potatoes and bake for 45 to 60 minutes until tender.
  • Cook ground beef in a skillet until browned.
  • Add taco seasoning and a little water and simmer until thickened.
  • Cut open baked potatoes and fluff inside with a fork.
  • Add butter, salt, and pepper.
  • Top with beef, cheese, salsa, and sour cream.
  • Serve warm.

Notes

Microwave potatoes for a quicker option.
Customize with additional toppings.
Store leftovers separately for best texture.
