Taco Potatoes

large russet potatoes

lb
ground beef
1
packet taco seasoning
or 2 tablespoons

cups
shredded cheddar or Mexican blend cheese
1
cup
sour cream
1
cup
salsa
2
tablespoons
butter
1
teaspoon
salt
½
teaspoon
black pepper
Instructions
Preheat oven to 400°F.
Wash and pierce potatoes and bake for 45 to 60 minutes until tender.
Cook ground beef in a skillet until browned.
Add taco seasoning and a little water and simmer until thickened.
Cut open baked potatoes and fluff inside with a fork.
Add butter, salt, and pepper.
Top with beef, cheese, salsa, and sour cream.
Serve warm.
Notes
Microwave potatoes for a quicker option.
Customize with additional toppings.
Store leftovers separately for best texture.
