Taco Potato Bake

Taco Potato Bake Recipe with crispy potatoes, seasoned beef, and melted cheese baked to perfection.

Ingredients
  

  • 4 cups russet potatoes peeled and diced
  • 1 lb ground beef
  • 1 packet taco seasoning about 2 tbsp
  • ½ cup water
  • 2 cups shredded cheddar cheese
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ cup sour cream
  • ½ cup salsa
  • 2 tbsp chopped green onions
  • 1 cup black beans
  • 1 cup corn

Instructions
 

  • Preheat oven to 400°F.
  • Peel and dice potatoes into small cubes.
  • Toss potatoes with olive oil, salt, and pepper, then spread in a baking dish.
  • Bake potatoes for 25 minutes until slightly tender.
  • Cook ground beef in a skillet over medium heat until browned, then drain excess grease.
  • Add taco seasoning and water to beef, stir, and simmer until thickened.
  • Remove potatoes from oven and mix with seasoned beef.
  • Spread mixture evenly and top with shredded cheese.
  • Bake for an additional 10–15 minutes until cheese is melted and bubbly.
  • Remove from oven and let cool slightly.
  • Top with sour cream, salsa, green onions, beans, and corn before serving.

Notes

Cut potatoes evenly for consistent cooking.
Pre-baking potatoes helps them cook fully.
Adjust toppings based on preference.
