russet potatoes
peeled and diced

packet taco seasoning

shredded cheddar cheese

sour cream

salsa

Instructions
Preheat oven to 400°F.
Peel and dice potatoes into small cubes.
Toss potatoes with olive oil, salt, and pepper, then spread in a baking dish.
Bake potatoes for 25 minutes until slightly tender.
Cook ground beef in a skillet over medium heat until browned, then drain excess grease.
Add taco seasoning and water to beef, stir, and simmer until thickened.
Remove potatoes from oven and mix with seasoned beef.
Spread mixture evenly and top with shredded cheese.
Bake for an additional 10–15 minutes until cheese is melted and bubbly.
Remove from oven and let cool slightly.
Top with sour cream, salsa, green onions, beans, and corn before serving.
Notes
Cut potatoes evenly for consistent cooking.
Pre-baking potatoes helps them cook fully.
Adjust toppings based on preference.
