Taco Cupcakes

Taco cupcakes with seasoned beef, cheese, and biscuit crust. Easy fun party snack recipe.

Ingredients
  

  • 1 lb ground beef
  • 1 packet taco seasoning or 2 tablespoons
  • 1 can 8 biscuits refrigerated biscuit dough
  • 1 ½ cups shredded cheddar cheese
  • ½ cup salsa
  • ½ cup sour cream
  • Cooking spray

Instructions
 

  • Preheat oven to 375°F and grease a muffin tin.
  • Cook ground beef in a skillet until browned, then drain excess fat.
  • Add taco seasoning and a small amount of water, then simmer until thickened.
  • Flatten each biscuit and press into muffin cups to form a base.
  • Add a layer of beef, then cheese, and a spoonful of salsa.
  • Repeat layers if desired, finishing with cheese on top.
  • Bake for 12 to 15 minutes until golden and cooked through.
  • Let cool slightly, then remove from the muffin tin.
  • Top with sour cream and serve.

Notes

Grease muffin tin well to prevent sticking.
Do not overfill to keep structure intact.
Add toppings after baking for freshness.
