Sweet Roasted Rhubarb

Ingredients
  

  • 4 cups rhubarb chopped
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

Instructions
 

  • Preheat oven to 375°F.
  • Place chopped rhubarb in a baking dish.
  • Sprinkle sugar over rhubarb.
  • Add lemon juice and vanilla extract.
  • Toss gently to coat.
  • Roast for 20 to 25 minutes until tender.
