rhubarb

Instructions
Preheat oven to 375°F.
Place chopped rhubarb in a baking dish.
Sprinkle sugar over rhubarb.
Add lemon juice and vanilla extract.
Toss gently to coat.
Roast for 20 to 25 minutes until tender.
Cool slightly and serve.
Notes
Adjust sugar based on tartness.
