Super Moist Pumpkin Bread

Ingredients
  

  • 1 ¾ cups all-purpose flour
  • 1 cup pumpkin purée
  • 1 cup brown sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 ½ teaspoons cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon cloves
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat oven to 350°F. Line a loaf pan with parchment. Whisk pumpkin, oil, sugar, eggs, and vanilla until smooth. In another bowl, mix flour, baking soda, baking powder, salt, and spices. Fold dry ingredients into wet until just combined. Pour batter into pan. Bake 50–60 minutes until a toothpick shows moist crumbs. Cool before slicing.

Notes

Do not overmix batter. Let bread cool fully before cutting.
