Ingredients

  • 2 ¼ cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup unsalted butter softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese softened
  • ¼ cup unsalted butter softened (for frosting)
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract for frosting
  • 1 cup sliced strawberries
  • ½ cup blueberries
  • 2 kiwi sliced
  • ½ cup mandarin oranges
  • ½ cup raspberries optional

Instructions

  • Preheat oven to 350°F and line a 12-inch pizza pan or baking sheet with parchment paper. In a medium bowl, whisk together flour, baking powder, and salt. In a large bowl, cream softened butter and granulated sugar until light and fluffy. Add egg and vanilla extract and mix until smooth. Gradually add dry ingredients and mix until combined. Press dough evenly into prepared pan, forming a round crust. Bake for 12–15 minutes until lightly golden. Allow cookie base to cool completely. For frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract until creamy. Spread frosting evenly over cooled cookie base. Arrange fruit on top in decorative patterns. Chill for 30 minutes before slicing and serving.

Notes

Cool cookie completely before frosting to prevent melting. Pat fruit dry before arranging to reduce excess moisture. Store covered in refrigerator for up to 3 days. Add delicate fruits just before serving for best appearance.
