Ingredients

corn kernels
fresh, canned, or frozen

plain Greek yogurt

mayonnaise

crumbled cotija cheese

lime juice

olive oil

salt

black pepper

chili powder

smoked paprika

garlic powder

chopped cilantro

jalapeño
chopped
Instructions
Heat olive oil in a skillet over medium heat.
Add corn and cook for 5–7 minutes until slightly roasted.
Remove from heat and let cool slightly.
In a bowl, mix Greek yogurt and mayonnaise until smooth.
Add corn to the bowl.
Stir in cotija cheese, lime juice, chili powder, paprika, garlic powder, salt, and pepper.
Mix until well combined.
Add cilantro and jalapeño if desired.
Toss gently and serve.
Notes
Let corn cool before mixing with yogurt.
Adjust spice level to taste.
Use fresh corn for best flavor.
