Street Corn Salad with Greek Yogurt

Ingredients
  

  • 4 cups corn kernels fresh, canned, or frozen
  • ½ cup plain Greek yogurt
  • 2 tbsp mayonnaise
  • ½ cup crumbled cotija cheese
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • 2 tbsp chopped cilantro
  • 1 jalapeño chopped

Instructions
 

  • Heat olive oil in a skillet over medium heat.
  • Add corn and cook for 5–7 minutes until slightly roasted.
  • Remove from heat and let cool slightly.
  • In a bowl, mix Greek yogurt and mayonnaise until smooth.
  • Add corn to the bowl.
  • Stir in cotija cheese, lime juice, chili powder, paprika, garlic powder, salt, and pepper.
  • Mix until well combined.
  • Add cilantro and jalapeño if desired.
  • Toss gently and serve.

Notes

Let corn cool before mixing with yogurt.
Adjust spice level to taste.
Use fresh corn for best flavor.
