Ingredients

large chicken breasts

cooked rice

corn

mayonnaise

sour cream or Greek yogurt

cotija cheese
crumbled

lime juice

garlic

teaspoon
chili powder

paprika

olive oil

tablespoons
fresh cilantro
chopped
Instructions
Heat olive oil in a skillet and cook seasoned chicken until fully cooked.
Remove and slice chicken.
Cook corn in the same skillet until slightly charred.
In a bowl, mix corn with mayonnaise, sour cream, lime juice, garlic, and half the cheese.
Add rice to bowls, then top with chicken and corn mixture.
Sprinkle remaining cheese and cilantro on top.
Serve warm.
Notes
Use fresh lime juice for best flavor.
Char corn for extra taste.
