Street Corn Chicken Rice Bowl

Ingredients
  

  • 2 large chicken breasts
  • 2 cups cooked rice
  • 2 cups corn
  • cup mayonnaise
  • cup sour cream or Greek yogurt
  • ½ cup cotija cheese crumbled
  • 2 tablespoons lime juice
  • 2 cloves garlic minced
  • 1 teaspoon chili powder
  • ½ teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons fresh cilantro chopped

Instructions
 

  • Heat olive oil in a skillet and cook seasoned chicken until fully cooked.
  • Remove and slice chicken.
  • Cook corn in the same skillet until slightly charred.
  • In a bowl, mix corn with mayonnaise, sour cream, lime juice, garlic, and half the cheese.
  • Add rice to bowls, then top with chicken and corn mixture.
  • Sprinkle remaining cheese and cilantro on top.
  • Serve warm.

Notes

Use fresh lime juice for best flavor.
Char corn for extra taste.
Customize with additional toppings if desired.
