Strawberry White Chocolate Gooey Cookies

Strawberry white chocolate gooey cookies made with freeze-dried strawberries and melted white chocolate for soft, creamy centers.

Ingredients
  

  • ½ cup unsalted butter melted and cooled
  • ½ cup granulated sugar
  • ¼ cup light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup freeze-dried strawberries crushed
  • ¾ cup white chocolate chips or chunks
  • 1 –2 drops pink food coloring optional

Instructions
 

  • Preheat oven to 350°F. Line baking sheets with parchment paper.
  • In a large bowl, whisk melted butter, granulated sugar, and brown sugar until smooth.
  • Add egg and mix until fully combined. Stir in vanilla extract and optional food coloring.
  • In a separate bowl, whisk together flour, baking soda, salt, and crushed freeze-dried strawberries.
  • Add dry ingredients to wet ingredients and mix just until combined.
  • Fold in white chocolate chips gently.
  • Scoop dough into large portions and place on prepared baking sheets with space between each.
  • Bake for 10–12 minutes until edges are set and centers remain soft and glossy.
  • Cool cookies on the baking sheet for several minutes before transferring carefully.

Notes

Do not overbake. Cookies will continue to set as they cool but should remain soft in the center.
