Strawberry Shortcake with Lemon Cream

Ingredients
  

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ¼ cup sugar
  • ½ teaspoon salt
  • ½ cup cold butter cubed
  • ¾ cup milk or cream
  • 1 large egg
  • 1 cup heavy whipping cream
  • ¼ cup powdered sugar
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 3 cups fresh strawberries sliced
  • 2 tablespoons sugar

Instructions
 

  • Preheat oven to 400°F and line a baking sheet.
  • Mix flour, baking powder, sugar, and salt.
  • Cut in butter until crumbly.
  • Add milk and egg and mix into dough.
  • Shape into rounds and bake until golden.
  • Mix strawberries with sugar and set aside.
  • Whip cream with powdered sugar, lemon zest, lemon juice, and vanilla.
  • Slice shortcakes in half.
  • Layer strawberries and lemon cream between halves.
  • Top with more cream and strawberries and serve.

Notes

Use cold butter for flaky texture.
Assemble just before serving.
Use fresh strawberries for best flavor.
