shredded cheddar cheese

Instructions
Heat olive oil in a skillet over medium heat.
Add diced potatoes, salt, pepper, paprika, and garlic powder.
Cook for 12–15 minutes until crispy and golden.
In a bowl, mix sour cream, mayonnaise, and hot sauce.
Warm tortillas slightly.
Place potatoes in the center of each tortilla.
Add cheese, lettuce, jalapeños, and optional beans.
Drizzle spicy sauce over the filling.
Fold and roll into burritos.
Serve immediately.
Notes
Cook potatoes evenly for best texture.
Do not overcrowd pan to keep them crispy.
Adjust spice level to taste.
