Ingredients

medium yellow onion
chopped

garlic cloves

large eggs

salsa
1
packet taco seasoning

cup
breadcrumbs

cup
shredded cheddar or Mexican-blend cheese

teaspoon
salt

teaspoon
black pepper
Instructions
Preheat oven to 375°F. Mix ground beef, onion, garlic, eggs, salsa, taco seasoning, breadcrumbs, salt, and pepper until combined. Fold in cheese. Press into greased loaf pan. Bake uncovered 55–65 minutes. Rest 10 minutes before slicing.
Notes
Adjust salsa heat level to taste. Let meatloaf rest before cutting.
