fresh, canned, or frozen

Oil for frying or baking

chili powder

smoked paprika

garlic powder

jalapeño
finely chopped

chopped cilantro
Instructions
In a bowl, combine corn, cream cheese, cheddar cheese, flour, egg, salt, and pepper.
Add chili powder, paprika, garlic powder, jalapeño, and cilantro.
Mix until well combined.
Shape mixture into small bite-sized balls.
For frying, heat oil in a skillet and cook bites for 3–4 minutes until golden.
For baking, place bites on a lined baking sheet.
Bake at 400°F for 15–18 minutes until golden and slightly crispy.
Remove and let cool slightly before serving.
Notes
Drain corn well to prevent excess moisture.
Chill mixture if too soft to shape.
Adjust spice level to preference.
