Spicy Mexican Corn Bites

Spicy Mexican Corn Bites Recipe with crispy outside, creamy cheesy inside, and bold seasoning.

Ingredients
  

  • 2 cups corn kernels fresh, canned, or frozen
  • 4 oz cream cheese softened
  • 1 cup shredded cheddar cheese
  • ½ cup all-purpose flour
  • 1 egg
  • Oil for frying or baking
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • 1 jalapeño finely chopped
  • 2 tbsp chopped cilantro

Instructions
 

  • In a bowl, combine corn, cream cheese, cheddar cheese, flour, egg, salt, and pepper.
  • Add chili powder, paprika, garlic powder, jalapeño, and cilantro.
  • Mix until well combined.
  • Shape mixture into small bite-sized balls.
  • For frying, heat oil in a skillet and cook bites for 3–4 minutes until golden.
  • For baking, place bites on a lined baking sheet.
  • Bake at 400°F for 15–18 minutes until golden and slightly crispy.
  • Remove and let cool slightly before serving.

Notes

Drain corn well to prevent excess moisture.
Chill mixture if too soft to shape.
Adjust spice level to preference.
