Spicy Jalapeño Popper Meatloaf with Creamy Ranch Drizzle

Spicy Jalapeño Popper Meatloaf stuffed with cream cheese, jalapeños, bacon, and finished with ranch drizzle.

Ingredients
  

  • 1 ½ pounds ground beef
  • 2 large eggs
  • 1 cup breadcrumbs
  • ½ cup milk
  • 3 jalapeños seeded and diced
  • 6 oz cream cheese softened
  • 6 slices cooked bacon chopped
  • 1 cup shredded cheddar or pepper jack cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup ranch dressing

Instructions
 

  • Preheat oven to 375°F. Mix beef, eggs, breadcrumbs, milk, and seasonings. Combine cream cheese, jalapeños, bacon, and cheese separately. Layer half the meat mixture, add filling, then top with remaining meat. Bake 55–65 minutes. Rest, slice, and drizzle with ranch.

Notes

Adjust jalapeños to control heat. Let meatloaf rest before slicing.
