Preheat oven to 425°F. Cut fish into even bite-size pieces and pat dry. Mix flour with spices in one bowl. Beat eggs in a second bowl. Place breadcrumbs in a third bowl. Coat fish in flour, dip into eggs, then roll in breadcrumbs. Arrange on a lined baking sheet with space between pieces. Lightly spray with oil. Bake for 18–20 minutes, flipping halfway, until golden and crisp.
