Shepherd’s Pie Baked Potatoes

Shepherd’s Pie Baked Potatoes filled with seasoned beef, vegetables, mashed potatoes, and cheese.

Ingredients
  

  • 4 large russet potatoes
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small yellow onion diced
  • 2 garlic cloves minced
  • 1 cup frozen mixed vegetables
  • ½ cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups prepared mashed potatoes
  • 1 cup shredded cheddar cheese

Instructions
 

  • Bake potatoes at 400°F until tender. Brown beef with onion and garlic. Stir in vegetables, broth, Worcestershire sauce, salt, and pepper. Simmer briefly. Slice potatoes and scoop centers. Fill with meat mixture and top with mashed potatoes and cheese. Bake until golden.

Notes

Bake potatoes directly on the rack for crisp skins.
