Sheet Pan Chicken Pitas

Sheet Pan Chicken Pitas with juicy chicken, roasted vegetables, and soft pita bread, an easy one-pan meal.

Ingredients
  

  • 1 lb chicken breast or thighs cut into strips
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 medium red onion sliced
  • 3 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 4 pita breads
  • ½ cup Greek yogurt or tzatziki sauce
  • 2 tablespoons fresh parsley optional

Instructions
 

  • Preheat oven to 425°F and line a sheet pan.
  • Place chicken, peppers, and onion on the pan.
  • Add olive oil, garlic, and spices, then toss to coat.
  • Spread in a single layer.
  • Roast for 20–25 minutes, stirring halfway through.
  • Warm pita bread separately.
  • Fill pitas with chicken and vegetables.
  • Add yogurt or tzatziki sauce.
  • Garnish with parsley and serve.

Notes

Do not overcrowd the pan for proper roasting.
Warm pita bread before serving.
Adjust seasoning to taste.
