Sausage Tortellini Soup

Sausage tortellini soup made with creamy broth, Italian sausage, and tender tortellini. A hearty and easy one-pot meal.

Ingredients
  

  • 1 pound Italian sausage
  • 9 oz cheese tortellini
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 can 14.5 oz diced tomatoes
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 cups fresh spinach
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add Italian sausage and cook until browned, breaking it into small pieces.
  • Remove excess grease if needed.
  • Add diced onion and cook until softened.
  • Stir in minced garlic and cook briefly until fragrant.
  • Add chicken broth, diced tomatoes, Italian seasoning, salt, and black pepper.
  • Bring to a boil, then reduce heat and simmer.
  • Add tortellini and cook for 5–7 minutes until tender.
  • Stir in heavy cream and fresh spinach.
  • Cook until spinach wilts and soup becomes creamy.
  • Serve warm.

Notes

Use mild or spicy sausage based on preference.
Add red pepper flakes for extra heat.
Reheat with added broth if soup thickens.
Best served fresh for optimal texture.
