Butter or oil for cooking
Instructions
Cook sausage in a skillet over medium heat until browned and cooked through. Set aside.
In a bowl, whisk eggs with milk, salt, and black pepper.
Melt butter or oil in the skillet and scramble eggs gently until just set.
Warm tortillas briefly so they are flexible.
Divide scrambled eggs evenly among tortillas.
Add cooked sausage and sprinkle with shredded cheese.
Roll tortillas tightly, folding in sides slightly.
Optional: Place roll-ups seam-side down in a skillet for 1–2 minutes to melt cheese fully.
Serve warm or slice as desired.
Notes
Do not overcook eggs. Soft scrambled eggs keep the roll-ups moist when reheated.
