Ricotta Spinach Quiche

Ingredients
  

  • 1 pie crust
  • 1 cup ricotta cheese
  • 2 cups fresh spinach chopped
  • 4 large eggs
  • ½ cup milk
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

  • Preheat oven to 375°F.
  • Heat olive oil in a skillet and cook garlic briefly.
  • Add spinach and cook until wilted, then let cool.
  • In a bowl, whisk eggs, ricotta, milk, Parmesan, salt, and pepper.
  • Stir in spinach mixture.
  • Place pie crust in a dish and pour in filling.
  • Bake for 35 to 40 minutes until set and lightly golden.
  • Cool slightly before slicing and serving

Notes

Do not overbake to keep texture creamy.
Drain spinach well if using frozen.
Let quiche rest before cutting.
