Ingredients

ricotta cheese

fresh spinach
chopped

large eggs

milk

grated Parmesan cheese

garlic

olive oil

black pepper
Instructions
Preheat oven to 375°F.
Heat olive oil in a skillet and cook garlic briefly.
Add spinach and cook until wilted, then let cool.
In a bowl, whisk eggs, ricotta, milk, Parmesan, salt, and pepper.
Stir in spinach mixture.
Place pie crust in a dish and pour in filling.
Bake for 35 to 40 minutes until set and lightly golden.
Cool slightly before slicing and serving
Notes
Do not overbake to keep texture creamy.
Drain spinach well if using frozen.
Let quiche rest before cutting.
