Rhubarb Lemon Bars
Rhubarb lemon bars with buttery crust and tangy lemon filling. Easy dessert recipe.

Ingredients

all-purpose flour

powdered sugar

unsalted butter
cold

rhubarb
chopped

cup
granulated sugar

large eggs
⅓
cup
lemon juice

tablespoon
lemon zest

cup
all-purpose flour
for filling
½
teaspoon
baking powder
¼
teaspoon
salt
Instructions
Preheat oven to 350°F and line a baking pan.
Mix flour and powdered sugar and cut in butter.
Press into pan and bake 15 to 18 minutes.
Whisk eggs and sugar, then add lemon juice and zest.
Mix in flour, baking powder, and salt.
Stir in rhubarb.
Pour over crust and bake 30 to 35 minutes.
Cool completely and slice.
Notes
Use fresh or drained frozen rhubarb.
Let cool before cutting.
Dust with powdered sugar before serving.
