Rhubarb Lemon Bars

Rhubarb lemon bars with buttery crust and tangy lemon filling. Easy dessert recipe.

Ingredients
  

  • 1 ½ cups all-purpose flour
  • ½ cup powdered sugar
  • ¾ cup unsalted butter cold
  • 2 cups rhubarb chopped
  • 1 cup granulated sugar
  • 3 large eggs
  • cup lemon juice
  • 1 tablespoon lemon zest
  • ¼ cup all-purpose flour for filling
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

Instructions
 

  • Preheat oven to 350°F and line a baking pan.
  • Mix flour and powdered sugar and cut in butter.
  • Press into pan and bake 15 to 18 minutes.
  • Whisk eggs and sugar, then add lemon juice and zest.
  • Mix in flour, baking powder, and salt.
  • Stir in rhubarb.
  • Pour over crust and bake 30 to 35 minutes.
  • Cool completely and slice.

Notes

Use fresh or drained frozen rhubarb.
Let cool before cutting.
Dust with powdered sugar before serving.
