Ingredients
  

  • 1 ½ pounds boneless chicken thighs
  • 3 tablespoons olive oil
  • 2 teaspoons paprika
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon garlic powder
  • ½ teaspoon turmeric
  • Salt and black pepper to taste
  • 2 cups cooked rice
  • Toppings
  • 1 cup cucumber chopped
  • 1 cup tomato chopped
  • ½ cup red onion sliced
  • ¼ cup fresh parsley
  • Sauce
  • ½ cup plain yogurt
  • 1 tablespoon lemon juice
  • 1 clove garlic minced

Instructions
 

  • Mix olive oil, spices, salt, and pepper. Coat chicken evenly and rest briefly. Heat skillet over medium heat. Cook chicken until browned and cooked through. Slice thinly. Prepare rice. Arrange rice in bowls, top with chicken and vegetables. Mix sauce ingredients and drizzle over bowls.

Notes

Cook chicken in batches for better browning.
