Ingredients

large russet potatoes

butter

sour cream

milk

shredded cheddar cheese
½
cup
cooked bacon
crumbled
¼
cup
green onions
chopped

teaspoon
salt

teaspoon
black pepper
Instructions
Preheat oven to 400°F.
Wash and pierce potatoes, then bake for 45 to 60 minutes until tender.
Let potatoes cool slightly, then cut in half and scoop out the inside into a bowl.
Mash the potato with butter, sour cream, milk, salt, and pepper until smooth.
Stir in cheese, bacon, and green onions.
Spoon mixture back into potato skins.
Place on a baking sheet and bake for 15 to 20 minutes until heated through and slightly golden.
Serve warm.
Notes
Mash potatoes while warm for smoother texture.
Do not overmix to avoid dense filling.
Top with extra cheese or green onions if desired.
