Heat olive oil in a saucepan over medium heat. Add garlic and sauté until fragrant. Add tomatoes and break them apart with a spoon. Season with salt, pepper, and optional sugar. San Marzano tomatoes produce the best flavor. Adjust salt and sugar based on tomato acidity.
