Italian Sausage Lasagna

Pioneer Woman Lasagna

Pioneer Woman lasagna made with rich meat sauce, creamy ricotta mixture, and plenty of melted cheese. A classic comfort food recipe.

Ingredients
  

  • 1 package lasagna noodles about 12
  • 1 ½ pounds ground beef
  • 2 tablespoons olive oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 can 28 oz crushed tomatoes
  • 1 can 15 oz tomato sauce
  • 1 can 6 oz tomato paste
  • 1 ½ teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 2 cups ricotta cheese
  • 2 cups cottage cheese optional
  • 2 large eggs
  • 1 cup grated Parmesan cheese
  • 4 cups shredded mozzarella cheese
  • Fresh parsley for garnish optional

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add onion and cook until softened.
  • Add garlic and cook briefly until fragrant.
  • Add ground beef and cook until browned, breaking it apart. Drain excess grease if needed.
  • Stir in crushed tomatoes, tomato sauce, tomato paste, salt, pepper, oregano, and basil.
  • Reduce heat and simmer for 20–30 minutes until thickened.
  • Cook lasagna noodles in salted water until al dente. Drain and set aside.
  • In a bowl, mix ricotta, cottage cheese (if using), eggs, and Parmesan cheese until smooth.
  • Preheat oven to 375°F and grease a large baking dish.
  • Spread a thin layer of sauce on the bottom of the dish.
  • Layer noodles, cheese mixture, mozzarella, and meat sauce.
  • Repeat layers, finishing with sauce and mozzarella on top.
  • Cover with foil and bake for 40 minutes.
  • Remove foil and bake an additional 10–15 minutes until bubbly and lightly golden.
  • Let rest for 15 minutes before slicing and serving.

Notes

Let lasagna rest before cutting for clean slices. This recipe freezes well before or after baking.
