Instructions
Heat olive oil in a large pot over medium heat.
Add onion and cook until softened.
Add garlic and cook briefly until fragrant.
Add ground beef and cook until browned, breaking it apart. Drain excess grease if needed.
Stir in crushed tomatoes, tomato sauce, tomato paste, salt, pepper, oregano, and basil.
Reduce heat and simmer for 20–30 minutes until thickened.
Cook lasagna noodles in salted water until al dente. Drain and set aside.
In a bowl, mix ricotta, cottage cheese (if using), eggs, and Parmesan cheese until smooth.
Preheat oven to 375°F and grease a large baking dish.
Spread a thin layer of sauce on the bottom of the dish.
Layer noodles, cheese mixture, mozzarella, and meat sauce.
Repeat layers, finishing with sauce and mozzarella on top.
Cover with foil and bake for 40 minutes.
Remove foil and bake an additional 10–15 minutes until bubbly and lightly golden.
Let rest for 15 minutes before slicing and serving.
Notes
Let lasagna rest before cutting for clean slices. This recipe freezes well before or after baking.
