Peanut Butter S’mores Sandwich Cookies

softened

creamy peanut butter

granulated sugar

packed brown sugar

large egg

vanilla extract

all-purpose flour

baking soda

milk chocolate bars or chocolate chips

cup
marshmallow fluff or large marshmallows
Instructions
Preheat oven to 350°F and line baking sheets with parchment paper.
Cream butter, peanut butter, granulated sugar, and brown sugar until smooth.
Add egg and vanilla and mix until combined.
In a separate bowl, whisk flour, baking soda, and salt.
Add dry ingredients to wet mixture and mix until a soft dough forms.
Scoop tablespoon-sized portions of dough onto baking sheets and flatten slightly.
Bake for 8–10 minutes until edges are set and centers are soft. Cool slightly.
Place chocolate and marshmallow on the flat side of half the cookies.
Top with remaining cookies and press gently.
Return assembled cookies to the oven for 1–2 minutes to soften filling, if desired.
Notes
Serve slightly warm for best texture. Cookies firm up as they cool.
