Peanut Butter Oatmeal Bars (No Bake)

Easy no bake peanut butter oatmeal bars made with simple pantry ingredients.

Ingredients
  

  • 2 cups old-fashioned rolled oats
  • 1 cup natural peanut butter
  • ½ cup honey or maple syrup
  • ¼ cup coconut oil melted
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • ½ cup chocolate chips optional

Instructions
 

  • Line an 8×8-inch pan with parchment paper.
  • In a large bowl, mix oats and salt.
  • In a microwave-safe bowl, warm peanut butter, honey, and coconut oil until smooth.
  • Stir vanilla into the peanut butter mixture.
  • Pour wet mixture over oats and mix until fully combined.
  • Fold in chocolate chips if using.
  • Press mixture firmly into prepared pan.
  • Refrigerate for 1–2 hours until set.
  • Slice into bars and serve.

Notes

Press the mixture firmly to help bars hold together.
Store bars in the refrigerator for best texture.
