Peanut Butter Cup Cheesecake

Ingredients
  

  • 1 ½ cups chocolate cookie crumbs
  • cup butter melted
  • 24 oz cream cheese softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup creamy peanut butter
  • ½ cup sour cream
  • 1 teaspoon vanilla extract
  • 1 cup mini peanut butter cups chopped

Instructions
 

  • Preheat oven to 325°F and grease a springform pan.
  • Mix chocolate cookie crumbs with melted butter and press into the bottom of the pan.
  • Bake crust for 8 to 10 minutes, then let cool.
  • In a bowl, beat cream cheese and sugar until smooth.
  • Add peanut butter and mix until combined.
  • Add eggs one at a time, mixing gently after each addition.
  • Stir in sour cream and vanilla extract.
  • Fold in chopped peanut butter cups.
  • Pour filling over crust and smooth the top.
  • Bake for 50 to 60 minutes until center is slightly set.
  • Turn off oven and let cheesecake cool inside with the door slightly open.
  • Refrigerate for at least 4 hours or overnight before serving.

Notes

Use room temperature ingredients for smooth texture.
Do not overmix to prevent cracks.
Chill thoroughly before slicing.
