Instructions
Preheat oven to 325°F and grease a springform pan.
Mix chocolate cookie crumbs with melted butter and press into the bottom of the pan.
Bake crust for 8 to 10 minutes, then let cool.
In a bowl, beat cream cheese and sugar until smooth.
Add peanut butter and mix until combined.
Add eggs one at a time, mixing gently after each addition.
Stir in sour cream and vanilla extract.
Fold in chopped peanut butter cups.
Pour filling over crust and smooth the top.
Bake for 50 to 60 minutes until center is slightly set.
Turn off oven and let cheesecake cool inside with the door slightly open.
Refrigerate for at least 4 hours or overnight before serving.
Notes
Use room temperature ingredients for smooth texture.
Do not overmix to prevent cracks.
Chill thoroughly before slicing.
