Orange Cranberry Bread with Sweet Glaze

Soft orange cranberry bread topped with a light citrus glaze.

Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • teaspoons baking powder
  • ½ teaspoon salt
  • cups fresh cranberries
  • 1 tablespoon orange zest
  • ¾ cup fresh orange juice
  • cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Sweet Glaze
  • 1 cup powdered sugar
  • 2 –3 tablespoons orange juice

Instructions
 

  • Mix dry ingredients and cranberries. Mix wet ingredients separately. Combine gently. Bake at 350°F for 50–55 minutes. Drizzle glaze over warm bread.

Notes

Do not overmix batter. Let glaze set before slicing.
