russet or Yukon Gold, cubed

1 oz dry onion soup mix

olive oil

teaspoon
black pepper
Fresh parsley for garnish

Instructions
Preheat oven to 400°F and lightly grease a baking sheet.
Wash and cube potatoes into evenly sized pieces.
Pat potatoes dry to remove excess moisture.
Place potatoes in a large bowl and drizzle with olive oil.
Sprinkle onion soup mix and black pepper over the potatoes.
Toss until evenly coated.
Spread potatoes in a single layer on the baking sheet.
Roast for 40–45 minutes, stirring once halfway through, until golden and fork-tender.
Garnish with parsley if desired and serve hot.
Notes
Do not overcrowd the pan. Onion soup mix already contains salt, so no additional salt is needed.
