Onion Soup Roasted Potatoes

Onion soup roasted potatoes made with dry onion soup mix and olive oil. Crispy, savory, and easy oven-roasted potatoes.

Ingredients
  

  • 2 pounds potatoes russet or Yukon Gold, cubed
  • 1 packet 1 oz dry onion soup mix
  • ¼ cup olive oil
  • ¼ teaspoon black pepper
  • Fresh parsley for garnish optional

Instructions
 

  • Preheat oven to 400°F and lightly grease a baking sheet.
  • Wash and cube potatoes into evenly sized pieces.
  • Pat potatoes dry to remove excess moisture.
  • Place potatoes in a large bowl and drizzle with olive oil.
  • Sprinkle onion soup mix and black pepper over the potatoes.
  • Toss until evenly coated.
  • Spread potatoes in a single layer on the baking sheet.
  • Roast for 40–45 minutes, stirring once halfway through, until golden and fork-tender.
  • Garnish with parsley if desired and serve hot.

Notes

Do not overcrowd the pan. Onion soup mix already contains salt, so no additional salt is needed.
