Ingredients

  • 1 ¾ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • ½ teaspoon salt
  • 1 ½ cups granulated sugar
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 cup milk
  • 2 teaspoons vanilla extract
  • 1 cup hot coffee or hot water
  • 1 cup chopped walnuts

Instructions

  • Preheat oven to 350°F and grease a 9-inch baking pan. In a large bowl whisk together flour, cocoa powder, baking powder, baking soda, salt, and sugar. Add eggs, oil, milk, and vanilla extract and mix until smooth. Slowly stir in hot coffee or water until batter is smooth and slightly thin. Fold in chopped walnuts. Pour batter into prepared pan and bake for 30–35 minutes until a toothpick inserted in the center comes out clean. Allow to cool slightly before slicing and serving.

Notes

Hot coffee enhances chocolate flavor but hot water works as well. Do not overmix the batter. Store cake covered at room temperature for up to 4 days or freeze slices for up to 2 months.
