No-Bake Coconut Pecan Praline Cookies

No-bake coconut pecan praline cookies made with a buttery sugar base, sweet coconut, and crunchy pecans. A classic Southern no-bake treat.

Ingredients
  

  • 2 cups granulated sugar
  • 1 cup brown sugar
  • ½ cup unsalted butter
  • cup evaporated milk
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 cups sweetened shredded coconut
  • 1 ½ cups chopped pecans

Instructions
 

  • Line a baking sheet with parchment paper and set aside.
  • In a saucepan over medium heat, combine granulated sugar, brown sugar, butter, evaporated milk, and salt.
  • Stir constantly until the mixture comes to a rolling boil.
  • Once boiling, continue to boil for 3 minutes, stirring frequently.
  • Remove from heat and stir in vanilla extract.
  • Immediately add shredded coconut and chopped pecans and stir until fully coated.
  • Drop spoonfuls of the mixture onto the prepared parchment paper.
  • Let cookies cool and set at room temperature for 20–30 minutes before serving.

Notes

Boiling time is crucial for proper setting. Work quickly once coconut and pecans are added.
