Miso Caramelized Onion Dip

Ingredients
  

  • 2 large yellow onions thinly sliced
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 tablespoon white miso paste
  • 1 cup sour cream
  • ½ cup plain Greek yogurt
  • 1 clove garlic minced
  • ½ teaspoon fresh thyme optional
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon fresh chives chopped (for garnish)

Instructions
 

  • Heat olive oil and butter in a large skillet over medium-low heat. Add thinly sliced onions and cook for 25–30 minutes, stirring occasionally, until deeply golden and caramelized. Add minced garlic during the final 2 minutes of cooking. Remove from heat and allow onions to cool slightly. In a mixing bowl, stir together sour cream, Greek yogurt, white miso paste, salt, and black pepper until smooth. Fold in caramelized onions and thyme if using. Refrigerate for at least 30 minutes to allow flavors to develop. Garnish with fresh chives before serving.

Notes

Caramelize onions slowly over low heat to prevent burning. Taste before adding additional salt since miso contains sodium. Store in an airtight container in the refrigerator for up to 4 days. Stir before serving.
