Mini Baked Egg & Cheese Brunch Cups

Mini baked egg and cheese brunch cups with bacon. Easy to prep, perfect for a Valentine brunch board.

Ingredients
  

  • 8 large eggs
  • ¼ cup milk
  • 1 cup shredded cheddar cheese
  • ½ cup cooked bacon chopped
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Butter or cooking spray for greasing

Instructions
 

  • Preheat oven to 375°F and grease a muffin pan.
  • Whisk eggs and milk in a bowl until smooth.
  • Stir in cheese, bacon, salt, and pepper.
  • Pour mixture evenly into muffin cups, filling 3/4 full.
  • Bake for 18–22 minutes until set.
  • Cool for 5 minutes before removing from pan.

Notes

These egg cups can be made ahead and reheated before serving.
