Total Time 2 minutes

Ingredients

  • 2 large eggs
  • 1 tablespoon milk or water
  • Salt and pepper to taste

Instructions

  • Spray a 10- to 12-ounce microwave-safe coffee mug with cooking spray or grease with butter.
  • Add the eggs and milk to the mug, season with salt and pepper, and stir with a fork until well blended. Be sure to break the yolks so they don't burst.
  • Microwave on high for 40 seconds, then stir the edges inward. Microwave again for 20 seconds and stir.
  • Continue to microwave in 10- to 20-second intervals, stirring between each, until the eggs are just barely cooked through.
  • Serve warm.

Notes

Don't overcook: Eggs keep cooking from carryover heat after leaving the microwave, so pull them when just barely set to avoid dry, rubbery eggs.
Adjust for your microwave: For high-wattage models, start with 30 seconds. For softer, denser eggs, use 60–70% power and shorter bursts.
Safety: Never microwave an egg in its shell or a whole unbroken yolk. Always use a microwave-safe mug or dish.
Scaling: For 1 egg, start with 25 seconds, then cook in 15- to 20-second intervals. To double, use a microwave-safe bowl and cook in 30-second increments, stirring between each.
Toppings: Add cheddar, crumbled bacon, diced ham, tomatoes, avocado, fresh herbs, or hot sauce. Or build a bagel breakfast sandwich.
