- 1 tablespoon milk or water
- Salt and pepper to taste
Spray a 10- to 12-ounce microwave-safe coffee mug with cooking spray or grease with butter.
Add the eggs and milk to the mug, season with salt and pepper, and stir with a fork until well blended. Be sure to break the yolks so they don't burst.
Microwave on high for 40 seconds, then stir the edges inward. Microwave again for 20 seconds and stir.
Continue to microwave in 10- to 20-second intervals, stirring between each, until the eggs are just barely cooked through.
Serve warm.
Don't overcook: Eggs keep cooking from carryover heat after leaving the microwave, so pull them when just barely set to avoid dry, rubbery eggs.
Adjust for your microwave: For high-wattage models, start with 30 seconds. For softer, denser eggs, use 60–70% power and shorter bursts.
