- 2 large eggs
- 2 tablespoons milk or water
- Salt and black pepper to taste
- Nonstick cooking spray or butter
- ΒΌ cup shredded cheese cheddar, mozzarella, or Swiss
- 2 to 3 tablespoons diced vegetables bell pepper, onion, spinach, or tomato
- 1 to 2 tablespoons pre-cooked ham bacon, or sausage (optional)
Lightly spray a large microwave-safe mug with cooking spray or grease with butter.
Crack the eggs into the mug and add the milk, salt, and pepper. Whisk with a fork until well blended.
Stir in the cheese and any diced veggies or pre-cooked proteins, mixing well.
Microwave on high for 30 seconds, then stir. Continue cooking in 30-second bursts, stirring between each, until the omelet is puffed and just set (about 1 1/2 to 3 minutes total, depending on your microwave).
Let rest for 1 minute, then serve in the mug or turn out onto a plate.
Use a large mug: A 12- to 16-ounce mug gives the omelet room to puff without overflowing.
Fillings: Chop veggies small and pre-cook harder ones (like onion and pepper), since the quick cook time won't soften them. Any meats should be pre-cooked.
Don't overcook: Stop when it's just set; a slightly moist top will finish setting as it rests. Cook at medium power if eggs turn rubbery.
Microwave wattage: Higher-wattage models take about 1 1/2 to 2 minutes; a 700-watt microwave can take about 3 minutes.
Filling combos: Denver (ham, green pepper, onion, cheddar), Mediterranean (feta, spinach, tomato), Spanish-style (cooked potato, red pepper, smoked paprika), or simple cheese.
Storage: Best fresh. Refrigerate leftovers in an airtight container up to 2 days and reheat gently.
