Microwave Egg Quesadilla

Microwave egg quesadilla with fluffy eggs, melted cheese, and tortilla. A quick and easy breakfast ready in minutes.

Ingredients
  

  • 2 large eggs
  • 1 large flour tortilla
  • ½ cup shredded cheese
  • 2 tablespoons milk
  • 2 tablespoons diced bell peppers
  • 2 tablespoons diced onion
  • teaspoon salt
  • teaspoon black pepper
  • Cooking spray for greasing

Instructions
 

  • Lightly grease a microwave-safe plate or bowl.
  • Crack eggs into the bowl and add milk, salt, and black pepper.
  • Whisk until smooth and fully combined.
  • Stir in diced bell peppers and onion.
  • Microwave on high for 1 minute, then stir gently.
  • Microwave again for 30–60 seconds until eggs are fully set.
  • Let the eggs rest for 30 seconds.
  • Place tortilla on a microwave-safe plate.
  • Add cooked eggs to one half of the tortilla.
  • Sprinkle shredded cheese over the eggs.
  • Fold the tortilla in half.
  • Microwave for 30–45 seconds until cheese melts.
  • Let cool slightly, slice, and serve.

Notes

Do not overcook eggs to avoid a rubbery texture.
Add cooked bacon or sausage for extra flavor.
Use egg whites for a lighter option.
Serve with salsa or hot sauce for added taste.
