Mexican Street Corn Mac and Cheese

Ingredients
  

  • 12 oz elbow macaroni
  • 3 cups corn
  • 4 tablespoons butter
  • ¼ cup all-purpose flour
  • 2 cups milk
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • ½ cup cotija cheese crumbled
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons fresh cilantro chopped

Instructions
 

  • Cook macaroni until al dente and drain.
  • Cook corn in a skillet until slightly charred.
  • Melt butter in a saucepan and stir in flour.
  • Whisk in milk and cream and cook until thickened.
  • Add cheese and stir until smooth.
  • Season with salt, pepper, chili powder, and garlic powder.
  • Stir in lime juice.
  • Add pasta and corn and mix until coated.
  • Top with cotija cheese and cilantro.
  • Serve warm.

Notes

Use fresh lime juice for best flavor.
Stir sauce continuously to avoid lumps.
Add toppings just before serving.
