Ingredients

heavy cream

shredded cheddar cheese

cotija cheese
crumbled

lime juice

teaspoon
chili powder

teaspoon
garlic powder

teaspoon
salt

teaspoon
black pepper

fresh cilantro
chopped
Instructions
Cook macaroni until al dente and drain.
Cook corn in a skillet until slightly charred.
Melt butter in a saucepan and stir in flour.
Whisk in milk and cream and cook until thickened.
Add cheese and stir until smooth.
Season with salt, pepper, chili powder, and garlic powder.
Stir in lime juice.
Add pasta and corn and mix until coated.
Top with cotija cheese and cilantro.
Serve warm.
Notes
Use fresh lime juice for best flavor.
Stir sauce continuously to avoid lumps.
Add toppings just before serving.
