Ingredients
  

  • 4 cups corn kernels fresh, canned, or frozen
  • 2 tbsp butter
  • cup mayonnaise
  • ½ cup crumbled cotija cheese
  • 2 tbsp lime juice
  • 1 tsp chili powder
  • ½ tsp salt
  • 2 tbsp sour cream
  • ½ tsp garlic powder
  • 2 tbsp chopped cilantro
  • Hot sauce to taste

Instructions
 

  • Heat butter in a skillet over medium heat.
  • Add corn and cook for 5–7 minutes until heated and slightly roasted.
  • Transfer corn to a bowl.
  • Add mayonnaise, lime juice, chili powder, and salt.
  • Mix until evenly coated.
  • Stir in cotija cheese and optional ingredients like sour cream or cilantro.
  • Spoon into cups and serve warm.

Notes

Use fresh corn for best flavor.
Adjust seasoning to taste.
Substitute feta if cotija is unavailable.
