Instructions
Heat butter in a skillet over medium heat.
Add corn and cook for 5–7 minutes until heated and slightly roasted.
Transfer corn to a bowl.
Add mayonnaise, lime juice, chili powder, and salt.
Mix until evenly coated.
Stir in cotija cheese and optional ingredients like sour cream or cilantro.
Spoon into cups and serve warm.
Notes
Use fresh corn for best flavor.
Adjust seasoning to taste.
Substitute feta if cotija is unavailable.
