Mexican Street Corn Dip With Cream Cheese

Ingredients
  

  • 3 cups corn
  • 8 oz cream cheese softened
  • cup mayonnaise
  • cup sour cream
  • ½ cup cotija cheese crumbled
  • 1 cup shredded mozzarella or cheddar cheese
  • 2 cloves garlic minced
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons fresh cilantro chopped

Instructions
 

  • Cook corn in a skillet until slightly charred.
  • Preheat oven to 375°F.
  • Mix cream cheese, mayonnaise, sour cream, lime juice, garlic, chili powder, salt, and pepper until smooth.
  • Stir in corn, cotija cheese, and half the shredded cheese.
  • Transfer to a baking dish and top with remaining cheese.
  • Bake for 20 to 25 minutes until hot and bubbly.
  • Top with cilantro and serve warm.

Notes

Use softened cream cheese for smooth texture.
Add toppings before serving.
Customize spice level as desired.
