Mexican Street Corn Chicken

Mexican street corn chicken with creamy corn topping, lime, and cheese. Easy flavor-packed dinner recipe.

Ingredients
  

  • 4 chicken breasts
  • 2 cups corn
  • cup mayonnaise
  • cup sour cream
  • ½ cup cotija cheese crumbled
  • 2 tablespoons lime juice
  • 2 cloves garlic minced
  • 1 teaspoon chili powder
  • ½ teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons fresh cilantro chopped

Instructions
 

  • Heat olive oil in a skillet over medium heat.
  • Season chicken with salt, pepper, paprika, and chili powder.
  • Cook chicken for 5 to 6 minutes per side until fully cooked.
  • Remove chicken and set aside.
  • Cook corn in the same skillet until slightly charred.
  • In a bowl, mix corn with mayonnaise, sour cream, lime juice, garlic, and half the cheese.
  • Return chicken to skillet and top with corn mixture.
  • Cook for 2 to 3 minutes until heated through.
  • Top with remaining cheese and cilantro.
  • Serve warm.

Notes

Do not overcook chicken.
Use fresh lime juice for best flavor.
Customize with additional toppings if desired.
