Mexican Pinto Bean Chili

Mexican Pinto Bean Chili with tender beans, tomatoes, and Mexican-style spices simmered into a hearty meal.

Ingredients
  

  • 4 cups cooked pinto beans
  • 1 tablespoon olive oil
  • 1 medium yellow onion diced
  • 2 garlic cloves minced
  • 1 14.5 oz can diced tomatoes
  • 1 cup vegetable broth
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions
 

  • Heat olive oil in a pot over medium heat. Cook onion until soft. Add garlic and cook briefly. Stir in spices. Add beans, tomatoes, broth, salt, and pepper. Simmer uncovered for 25–30 minutes, stirring occasionally. Adjust thickness as desired.

Notes

Mash some beans for thicker chili. Adjust spice to taste.
