Mexican Corn in a Cup

Ingredients
  

  • 4 cups corn
  • ½ cup mayonnaise
  • ½ cup sour cream
  • ½ cup cotija cheese crumbled
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • 2 tablespoons butter
  • 2 tablespoons fresh cilantro chopped

Instructions
 

  • Melt butter in a skillet over medium heat.
  • Add corn and cook for 5 to 7 minutes until heated and slightly charred.
  • In a bowl, combine corn with mayonnaise, sour cream, lime juice, garlic powder, salt, and chili powder.
  • Mix until coated evenly.
  • Spoon into cups.
  • Top with cheese and cilantro.
  • Serve warm.

Notes

Use fresh lime juice for best flavor.
Add toppings just before serving.
Customize with extra spices if desired.
