Mexican Corn Coleslaw

Mexican corn coleslaw with creamy dressing, lime, and crunchy cabbage. Easy fresh side dish recipe.

Ingredients
  

  • 4 cups coleslaw mix
  • 2 cups corn
  • ½ cup mayonnaise
  • ½ cup sour cream
  • 2 tablespoons lime juice
  • ½ cup cotija cheese crumbled
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons fresh cilantro chopped

Instructions
 

  • Cook corn in a skillet until slightly charred, then let cool.
  • In a large bowl, combine coleslaw mix and corn.
  • In another bowl, whisk mayonnaise, sour cream, lime juice, chili powder, garlic powder, salt, and pepper.
  • Pour dressing over coleslaw and toss to coat evenly.
  • Stir in cotija cheese and cilantro.
  • Refrigerate for at least 30 minutes before serving.

Notes

Chill before serving for best flavor.
Use fresh lime juice.
Customize with additional ingredients if desired.
