Ingredients
  

  • 1 ½ pounds sirloin steak cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 garlic cloves minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon fresh parsley chopped
  • 1 teaspoon fresh thyme optional

Instructions
 

  • Remove steak from refrigerator 20–30 minutes before cooking. Pat dry and season evenly with salt and black pepper. Heat a large cast-iron skillet over high heat. Add olive oil and allow it to shimmer. Place half of the steak cubes in a single layer without overcrowding. Sear for 2 minutes without stirring, then flip and cook for another 1–2 minutes for medium-rare. Transfer to a plate and repeat with remaining steak. Reduce heat to medium and add butter to the skillet. Once melted, stir in minced garlic and cook for 30 seconds until fragrant. Return steak bites to the skillet and toss to coat in garlic butter for 1 minute. Remove from heat and sprinkle with parsley and thyme before serving.

Notes

Do not overcrowd the pan to achieve a proper sear. Cook garlic briefly to prevent bitterness. Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat gently in a skillet over low heat.
