  • 1.5 lbs boneless, skinless chicken breast, trimmed of fat
  • 3 medium zucchini, sliced into rounds
  • ½ cup fresh parsley or basil, chopped
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • ½ tsp garlic powder
  • Salt and black pepper to taste

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Trim all visible fat from the chicken breast and cut into bite-sized strips.
  • In a large bowl, toss the chicken strips with olive oil, oregano, garlic powder, salt, and pepper.
  • Arrange the sliced zucchini in the bottom of a 9x13 inch baking dish.
  • Place the seasoned chicken strips evenly over the layer of zucchini.
  • Bake for 45 minutes or until the chicken reaches an internal temperature of 165°F and the zucchini is tender.
  • Remove from the oven, drizzle with fresh lemon juice, and garnish with fresh parsley or basil before serving.
