Mac and Cheese Meatloaf Casserole

Ingredients
  

  • 1 lb ground beef
  • ½ cup breadcrumbs
  • 1 large egg
  • ¼ cup milk
  • ½ cup onion chopped
  • 2 cloves garlic minced
  • cup ketchup
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups cooked elbow macaroni
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 2 tablespoons butter
  • 2 tablespoons flour
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

  • Preheat oven to 375°F and grease a baking dish.
  • In a bowl, mix ground beef, breadcrumbs, egg, milk, onion, garlic, ketchup, salt, and pepper.
  • Press mixture into the bottom of the baking dish.
  • Bake for 20 to 25 minutes until partially cooked.
  • In a saucepan, melt butter and stir in flour, cooking briefly.
  • Gradually whisk in milk and cook until thickened.
  • Add cheese, salt, and pepper, stirring until smooth.
  • Mix in cooked macaroni.
  • Spread mac and cheese over the meatloaf layer.
  • Bake for another 15 to 20 minutes until heated through.
  • Serve warm.

Notes

Do not overmix meat mixture.
Use freshly shredded cheese for best texture.
Allow to rest slightly before serving.
